are the calories from sugar included with the total calories under the nutrition facts of foods like sodas and other sugary snacks. Or is sugar hidden calories?

In most countries, it's a legal condition that they are counted. Usually it's difficult to work out the calorific content without all the ingredients anyway because the way they do it is by burning the food and seeing how much energy is released.
The only hidden calories are when you add your own sugar or add butter or sauce or anything not counted as the main product.
