i understand how to work out most of it but where it says '+5y' and then '-9y' do i add or subtract. Also im not sure on how to manage the lower number and bigger number when subtracting.

So in order to do this problem you need to break it into parts.
8x +5y +4z -4x +2z -9y
=
8x -4x +5y -9y +4z +2z // I just rearanged it so it is easier to see what i do next.
4x -4y +6z
=
4x -4y +6z
In your question you asked about "+5y" and "-9y"
just as 5 minus 9 = -4 thus +5y -9y = -4y
